Pimpinella anisum

 

Anise seed (Pimpinella anisum) is an ancient Mediterranean spice known to the Egyptians, Greeks, and Romans, later spreading through Medieval Europe where it was even used as tax payment. Cultivated for thousands of years, anise is now grown worldwide and valued for its sweet, licorice‑like aroma and flavor, reminiscent of fennel.

A member of the carrot and cumin family, anise is used whole or freshly ground in baking, teas, tinctures, and cordials. Its distinctive flavor appears in global cuisines—from French and Scandinavian breads to curries, stews, and classic liqueurs like ouzo, anisette, and pastis. Heating or grinding the seeds releases aromatic anethole, which enhances flavor and helps preserve baked goods.
